Improve your upcoming long weekend with this yummy hot cross bun recipe. Spread some Softy on them for added flavour. 😜 #WoodlandsDairySA #FortheGoodofAll TRADITIONAL HOT CROSS BUNS (Serves: 12) Prepping time: 1 hour and 40 mins

Cook time: 20 mins Ingredients:

* 1 C First Choice warm milk (heated to 38 – 43Β°C)

* 2 tsp instant dried yeast

* 4 Tbsp sugar

* 4 C + 2 Tbsp all-purpose flour

* 1 tsp salt

* 1 tsp ground cinnamon

* 1 tsp allspice

* ΒΌ tsp ground ginger

* 1 C dried currants or raisins

* 6 Tbsp melted First Choice Butter

* 2 large eggs, beaten 

For the cross:

* β…“ C all-purpose flour

* 2 Tbsp sugar

* 2 Tbsp lemon zest (from 2 lemons) For the glaze:

* 2 Tbsp powdered sugar

* Hot water

Directions:

1. Mix yeast and sugar into the warm milk and let it sit for 3-5 minutes until it starts to bubble.

2. In a mixing bowl, combine flour, salt, spices, currants or raisins. Create a well in the centre and add the milk-yeast mixture, melted butter and beaten eggs. Use a spatula to mix, then use your hands to form a sticky dough. Turn it out onto a floured surface and knead for about 5 mins until smooth. Place in an oiled bowl, cover with a towel and let it rise in a warm place for about 45 mins.

3. Turn the dough onto a floured surface, knead lightly and divide into 12 balls. Shape each into a bun, place closely on a baking sheet with parchment paper and cover loosely with a towel. Allow to rise for 30 mins in a warm place.

4. Preheat the oven to 200Β°C.

5. For the crosses, mix flour, sugar and lemon zest. Add enough hot water to make a thick paste. Put it in a ziplock bag, cut a corner and pipe a cross on each bun.

6. Bake for 15-20 mins until golden brown.

7. For the glaze, mix powdered sugar with 1 tablespoon warm water until syrupy. Brush the warm buns with the glaze. Cool on a wire rack.

8. Store the buns in an airtight container for up to 4 days. If they become firm, microwave them individually for about 20 secs to soften and warm them
