HEARTY CHEESE MUFFINS (Serves 6 – 12 muffins)tongue-out

INGREDIENTS
* 2 C flour
* 4 tsp baking powder
* Β½ tsp salt
* β…› tsp cayenne pepper
* ΒΌ C First Choice Butter
* 1 C First Choice Full Fat Cheddar Cheese (grated)
* 2 Tbsp parmesan cheese (grated)
* 1 green onion finely (chopped)
* 2 eggs
* 1 C First Choice Milk
* 3 Tbsp sugar
DIRECTIONS
1. Preheat the oven to 190Β°C and grease a muffin tray.
2. In a medium bowl, whisk together all dry ingredients except for the sugar.
3. Using a pastry cutter or fork, add the butter into the mixture. Then, add the cheese and green onion.
4. In a separate bowl, whisk the eggs until foamy. Mix in the milk and sugar.
5. Combine the wet ingredients with the dry mixture, stirring just until moistened; avoid overmixing.
6. Pour the batter into the prepared muffin tray and bake for 16–18 mins, or until a toothpick inserted into the centre comes out clean.
